Asturian Michelin-starred executive chef Nacho Manzano cooks at his family restaurant Casa Marcial, in the Asturian mountains. He is especially well known for his fish cookery and playful new versions of traditional dishes. He has travelled widely to give masterclasses and represents Asturias at major international events.

Head chef Santiago Guerrero from Madrid, trained both in Spain and England.He has worked in Michelin starred restaurants in Spain,El Celler de Can Roca,Hacienda Benazuza and Five stars hotels.In England the Castle Hotel,Somerset and The Waterside Inn.Before joining Iberica Food and Culture he worked as the Executive Sous-chef and acting Head Chef at London's Melia White House"s L"Albufera restaurant, voted best Spanish restaurant outside Spain,by the Ministerio de Agricultura Caza y Pesca of Spain.
